Yields 4 – 8 Servings
Ingredients:
- 2-5 lbs. Boneless / Skinless Chicken Thigh
- 2 Tsp Som’ Good “Hawaiian Smoke” Salt Seasoning per pound
- 1 Cup Water
- 1-2 Bags Luau (Taro) Leaves or Spinach
Preparation:
- Place chicken into a 6qt. or 8qt Instant Pot and add premeasured “Hawaiian Smoke.” Rub salt over all chicken (use tong or food glove)
- Place 1 or 2 bags of luau leaves on top of chicken (trim off stems)
- Add 1 cup of water
- Set Instant Pot to “HIGH” Pressure Cook for 11 minutes
- Natural Pressure Release for 10 Minutes then Quick Release
- Remove luau leaves, pull chicken with 2 forks, save and add broth from pot to the Kalua Chicken as desired for moist, juicy and flavorful “Kalua Chicken with Luau Leaves”
Crock Pot Slow Cooker: Place Luau Leaves on bottom of pot. Rub 1.5 tsp per pound of “Hawaiian Smoke” seasoning over entire chicken and place in slow cooker for 6 hours on low. Check
