Yields 12 Servings

Ingredients: 

  • 3-5 lb. Pork Butt or Shoulder
  • 1 Package “Hawaiian Chili Mix”
  • 1 can Diced Tomatoes
  • ½ Cup Water Favorite
  • 1 pkg. Flour or Corn Taco Tortillas
  • 1 pkg Cole Slaw Mix (cabbage/carrot) or cut iceberg Lettuce
  • 1 pkg. Mexican Cheese Blend or Cheddar
  • Fresh Cut Tomatoes and Cilantro (Optional)
  • Sour Cream (Optional)
  • Favorite Hot Sauce (Optional)

Preparation: 

  • In the Instant Pot: Cut pork into 3 equal pieces and make several slits on top
  • and bottom, add 1/2 cup water and 1 package “Hawaiian Chili Mix” to make
  • a paste, coat pork and add 1 can diced tomatoes
  • • Set Instant Pot for 90 min High Pressure Cook
  • • Natural Pressure: 30 min. then Quick Pressure Release
  • • Use sauce liquid to lightly garnish chicken for moist flavors
  • ** Serve: Either “Pulled” or “Chunky”
