Yields 12 Servings
Ingredients:
- 3-5 lb. Pork Butt or Shoulder
- 1 Package “Hawaiian Chili Mix”
- 1 can Diced Tomatoes
- ½ Cup Water Favorite
- 1 pkg. Flour or Corn Taco Tortillas
- 1 pkg Cole Slaw Mix (cabbage/carrot) or cut iceberg Lettuce
- 1 pkg. Mexican Cheese Blend or Cheddar
- Fresh Cut Tomatoes and Cilantro (Optional)
- Sour Cream (Optional)
- Favorite Hot Sauce (Optional)
Preparation:
- In the Instant Pot: Cut pork into 3 equal pieces and make several slits on top
- and bottom, add 1/2 cup water and 1 package “Hawaiian Chili Mix” to make
- a paste, coat pork and add 1 can diced tomatoes
- • Set Instant Pot for 90 min High Pressure Cook
- • Natural Pressure: 30 min. then Quick Pressure Release
- • Use sauce liquid to lightly garnish chicken for moist flavors
- ** Serve: Either “Pulled” or “Chunky”
